This is a great go-to meal to have for the week and plus it’s healthy! That’s a major bonus. Very simple.
What You’ll Need
1 can of white beans (rinsed)
1 can of black beans (rinsed)
Juice from one lemon
1 half of a red onion
Open cans of white and black beans and rinse then put into a big mixing bowl.
Peel and cut avocado as well as cucumber and red onion. Place everything into mixing bowl with white and black beans.
Mix all ingredients together. Cut lemon and squeeze juice over salad and mix together. Chill for a few hours before serving. I covered mine with aluminum foil.
This has lasted me pretty much all week and it’s delicious! Last night I mixed in ground turkey and topped with plain Greek yogurt.
