Ahhh the weekend. I love the weekend for many reasons 🙂
- Teaching gymnastics on Saturday morning
- Cleaning & laundry
- Meal prepping
#4 especially. If I don’t meal prep, my wallet will not be very happy. I will be searching for food out of the house and in all of the wrong places. Now don’t get me wrong, I DO like to go out to eat and order out and I do like to do this on the weekend. I always try and stick to the healthy options when dining out so I don’t stray too far off course. I like to spend the weekend meal prepping for the week. During the week, the last thing I want to think about doing is cooking a full course meal. I don’t mind whipping up a few sides but cooking a full course meal during the week is a bit of a challenge for moi.
I usually spend a few hours on Saturday or Sunday meal prepping. This consists of looking for coupons, making a grocery list, going to the grocery store then coming back home to meal prep. I cannot even begin to tell you how much time it saves me during the week. I make my lunches and dinners ahead of time so I only have to make or heat up sides. I make my breakfasts the night before. Not only does it save me time, it also restores my sanity.
My lunches usually consist of simple dishes such as salad or pita pockets. My dinners usually consist of pastas or meats and I always find a way to throw a million veggies in the mix. I like to keep things simple while keeping it healthy. Eating healthy doesn’t have to be boring. There are SO many fun and interesting healthy recipes on Pinterest and different blogs and websites that I follow.
I used to DREAD meal prepping, sometimes I still find myself sighing when I know it’s time to start the process but once I get in the kitchen and start the magic, I am good. I immediately go into my zone and begin prepping because I know how stress-free I will be during the week in the meals department :).
