This time of year means cold, cold, hot food and more cold! If you’re like me, I don’t like the cold weather and like to imagine myself on a beach somewhere tropical, but might as well enjoy the cold while it’s here. This recipe makes the cold bearable because you can curl up on the couch with a cup of this and a good tv show or movie and I can promise you that you won’t want to leave the spot 🙂
I found this recipe online and I wanted to share. Enjoy!!!
Requires a crock pot and is a non-tomato chili (I cannot have tomatoes, so I had to get creative!).
60 oz (2 cans) white beans (I use 1 cannellini and 1 great northern)
2 large onions, chopped
1/3 cup minced garlic
1 Tbsp oregano
2 tsp cumin
2 tsp chili powder (chipotle recommended)
2 11-oz cans low sodium/low fat chicken broth
1/4 cup chopped cilantro
Garnish with greek, shredded cheese and extra freshly chopped cilantro (none of the garnishes included in nutrition calculation).
