I have always loved kabobs but I don’t make them as often as I would like to. This past weekend, my sister had a great idea to make meat and summer veggie kabobs. We decided on steak, shrimp, squash, zucchini and mushroom kabobs 🙂
We really wanted fresh shrimp but we arrived at the market too late and the seafood counter was closed 🙁 So we had to do frozen shrimp, but it was still good!
Meat and Veggie Kabobs
1 bag of frozen shrimp, peeled and de-veined (31/40 count)
2 zucchini cut into round or cubed pieces
2 yellow squash cut into round or cubed pieces
1 – 1.5 lb of steak sirloin cut into small pieces
A handful of mushrooms
Freshly ground black pepper to taste
Drizzle of extra virgin olive oil
- Make kabobs with all listed ingredients above.
- Drizzle kabobs with olive oil and sprinkle freshly ground black pepper to taste.
- Grill until cooked :)! We used the indoor George Foreman grill.
- Enjoy!!! You can pair with any sides. We did homemade tortilla chips and homemade guacamole. AMAZING :)!
