Picture this–one morning you’re sitting by the fireplace in a cabin, in Colorado, in the middle of Winter, looking out the window watching the snow fall with your sweetie, with a hot cup of coffee, cocoa or green tea :). Then you begin to smell goodies from the kitchen and realize that your sweetie has surprised you and started breakfast before you woke up. You smell bacon cooking and you just know that there are going to be eggs and french toast along with that yummy bacon. Your sweetie then tells you that only they have only started the bacon and they were about to go back to the kitchen to prep the eggs. You ask, “But where is the French Toast?” SURPRISE!! They found a HEALTHY recipe for French Toast! Healthy?! What — French Toast? Nope, it can’t be true! Well it is :). Then you realize that you brought with you the FIXATE cookbook on your little weekend getaway and put it together that your sweetie has been paying attention and found the recipe for “Healthy French Toast”!! You couldn’t be more excited! You both head to the kitchen and start making the rest of the meal together
Healthy French Toast:
2 large eggs
2 tbsp unsweetened almond milk
2 tsp pure maple syrup
(or raw honey), divided use
1/2 tsp ground cinnamon
2 slices low-sodium sprouted whole-grain bread
1 tsp extra virgin organic coconut oil
1 cup fresh sliced strawberries
1. Combine eggs, almond milk, 1 tsp maple syrup and cinnamon in a shallow pan, whisk to until blended.
2. Soak each slice of bread in the egg mixture for 5 minutes, turning halfway.
3. Heat oil in medium nonstick skillet over medium heat.
4. Add bread and cook for 2 to 3 minutes on each side or until golden brown.
5. Top each slice even with strawberries and remaining 1 tsp maple syrup.
6. Serve immediately.
