Healthy Baked Chicken Tenders with Greek Yogurt Ranch Dressing

Hello!! I love, love this recipe! Who doesn’t love chicken tenders? I found this recipe on Pinterest. I was looking for more ways to cook chicken. Funny, but I always find myself just making plain old chicken breasts. It gets boring at times! So I turned to Pinterest, which I do for most things 😉
This recipe is baked and not fried like the fast food chicken tenders. Not to mention the “ranch” dressing ACTUALLY tastes like ranch and there is not a drop of ranch in it!! It’s PHENOMONAL!! I hope you all enjoy this recipe just as much as I do. 
Healthy Baked Chicken Tenders with Greek Yogurt Ranch Dressing

1 lb boneless, skinless chicken breast, cut into 1-inch strips
Pinch of sea salt and freshly ground black pepper
2 cups whole wheat bread crumbs
½ tsp garlic powder
½ tsp onion powder
½ cup all-purpose flour
2 large beaten eggs
Greek Yogurt Ranch Dressing
½ cup plain Greek Yogurt
2 tbsp mayo
½ tsp garlic powder
½ tsp onion powder
Pinch of sea salt and freshly ground black pepper
1. In a small bowl, whisk together Greek Yogurt, mayo, garlic & onion powder, sea salt and fresh ground black pepper. Set aside.
2. Preheat oven to 450 (depending on oven). Put a cooling rack inside a baking sheet and coat rack with cooking spray. Set aside. (I took this to mean the cooling racks that you put cookies on to cool and they can fold down).
3. Season chicken strips with sea salt and freshly ground black pepper.
In a large bowl, combine bread crumbs, garlic & onion powder. Set aside.
4. Working one at a time, place chicken strip in the flour, dip into eggs, then place chicken strips in the bread crumb mixture and make sure you coat them!
5. Place breaded chicken strips on top of prepared cooking rack and lightly coat with cooking spray. Place into oven and bake for 8 minutes. 
6. Flip each strip over and lightly coat with cooking spray. Continue baking for 8 minutes, or until golden and crisp.
7. Serve immediately with Greek Yogurt Ranch Dressing. Enjoy!! 🙂 🙂
