Greek Chicken

This amazing recipe will make you a very happy camper. This dish was a part of my meal prep for the week and I am so happy that I found it! I rarely buy chicken thighs but today they were on sale. I will stop discriminating against the thighs and purchase them more often now :).

One Pan Greek Chicken 

16 ounces halved baby red potatoes
16 ounces trimmed green beans
2 tablespoons olive oil
Kosher salt and freshly ground black pepper, for taste
2 tablespoons chopped fresh parsley leaves


8 bone-in, skin on chicken thighs
1/4 cup olive oil
3 minced garlic cloves
Juice of 1 lemon
1 tablespoon red wine vinegar
1 tablespoon dried oregano
Kosher salt and freshly ground black pepper, for taste

1. Clean chicken. Grab a gallon ziploc bag. Combine 8 bone-in, skin on chicken thighs, 1/4 cup olive oil, 3 minced garlic cloves, juice of 1 lemon juice, 1 tablespoon red vine vinegar, 1 tablespoon oregano and salt and pepper to taste.

2. Marinate for 20 minutes to an hour (no more than this). Turn bag occasionally. Drain chicken from marinate and throw remainder of marinate away.

3. Preheat oven to 400 degrees and oil baking sheet.

4. Cut and wash 16 ounces baby red potatoes. Wash 16 ounces trimmed green beans. 

5. Put potatoes and green beans in a single layer on oiled baking sheet. Drizzle with more olive oil and sprinkle salt and pepper to taste. Add chicken thighs on top of the potatoes and green beans.

6. Put into oven and roast until chicken is completely done (about 25 – 30 minutes*depending on oven). 

7. Broil for 2 -3 minutes or until golden brown and some what charred. 

  Serve immediately and sprinkle with fresh garnished parsley. Enjoy!!
