Egg White Spinach Omelet

Although eggs are very good for you, they are chalk full of nutrients and protein. Sometimes too many eggs give me a heartburn :(. I can have eggs every day. I cannot eat breakfast without eggs on my plate ;). I just love eggs!!! My favorite — scrambled eggs, boiled eggs and omelets (It makes me uncomfortable that there is more than one way to spell this haha). I even put boiled eggs in my salad! So I found an alternative to my egg obsession — egg whites!!! I love egg white omelets. So, so good!! I hope by the end of this post you will also share my love for egg white omelets, if you don’t already 🙂

Egg White Spinach Omelet

3 egg whites
1 tbsp water
1 cup baby spinach
1 tsp olive oil
¼ cup any cheese (if you prefer)
Pinch of sea salt & pepper
Few diced tomatoes (if desired)
Sprinkle of parm

  1. In a medium bowl, whisk together egg whites and water. Season with salt and pepper.
  2. In a nonstick skillet, heat oil over medium-high heat. Add baby spinach and stir for a minute, until leaves are wilted and tender.
  3. Add in egg whites and cook until almost set. Use a spatula and lightly lift sides up around the outside of the omelet and let any uncooked egg whites run underneath.
  4. Spread cheese on top of omelet in the middle and sprinkle with parm. Fold each side of the omelet over, covering the cheese.
  5. Serve immediately and add diced tomatoes (if desired).  Enjoy!!!!
